Greatly attached to his hometown and dedicated to fostering good relations with his loyal clientele, chef Yves Méjean (formerly of the Bistrot des Flandres in Compiègne) is now in charge of this restaurant in the elegant and original decor of the T’Aim Hotel.
For a sense of showmanship, the kitchen opens up onto the dining room with its large bay windows. A great part of the decor is made up of numerous products shown in cabinets or on shelves. This desire for transparency helps to create a bond with the guests, assuring them of the freshness and authenticity of the products on offer.
The restaurant has a general menu but most of the dishes consist of suggestions of the day based on what’s available and the chef’s fancy. Yves Méjean creates dishes inspired by the cuisines of Southern France and other world cultures, all seen from a new angle. As for wine, small French producers are given pride of place, yet there are also several surprises to discover with wines from across the continents.
